Nourishising Mediterranean Bowl with Lemon Herb Turkey

A fresh and flavourful Mediterranean bowl featuring herb-marinated turkey, creamy hummus, tzatziki, greens, and nourishing grains.

Serves: 4–6


Lemon Herb Turkey

Ingredients

1–1½ lbs turkey fillet, cut into bite-sized pieces

3 cloves garlic, minced

2 tbsp fresh lemon juice

3 tbsp extra-virgin olive oil

1–2 tbsp chopped fresh herbs (rosemary, parsley, chives, oregano) or whatever combination you have on hand. The more the merrier for this dish!

Sea salt to taste and freshly cracked pepper


Instructions

  1. In a bowl, combine garlic, lemon juice, olive oil, herbs, salt, and pepper.

  2. Add turkey pieces and toss until evenly coated.

  3. Cover and marinate 4 hours or overnight for the best flavour.

  4. Grill on a flat top, grill pan, or skillet over medium-high heat for 6–8 minutes, turning occasionally, until cooked through.


Optional protein swaps:

Chicken breast, tofu or shrimp work beautifully as alternatives.


Simple Golden Hummus

Ingredients

1 can chickpeas, drained and rinsed

¼ cup filtered water - adding in gradually until you reach the desired consistency 

2 tbsp olive oil

Juice of 1/2 a lemon

1 clove garlic

½ tsp turmeric

Sea salt and black pepper


the Instructions

Blend all ingredients in a food processor until smooth and creamy. 


Tzatziki Sauce

Ingredients

1 cup plain yogurt (I love using Sheep's yogurt!))

1/4 cucumber, finely grated

1 clove garlic, minced

1 tbsp fresh dill

1 tbsp lemon juice

1 tbsp olive oil

Sea salt and pepper


Instructions

Mix all ingredients together in a bowl and refrigerate until ready to serve.


Bowl Base 

Choose one:

• Couscous

• Brown rice

• Quinoa (adds additional protein)

(Pro tip, cook any of the following grains with bone broth for added flavour and nutrition) 

Add:

• Fresh/or cooked spinach.


Toppings

• Kalamata olives

• Roasted red peppers

• Sliced cucumbers

• Beets

Sliced cherry tomatoes 

Diced Red onions

• Crumbled feta cheese


Assembly

  1. Start with a base of spinach and your grain of choice.

  2. Add grilled lemon herb turkey.

  3. Spoon hummus and tzatziki over top.

  4. Finish with your favourite Mediterranean toppings.


✨ Tip: This recipe is perfect for entertaining because everything can be prepped ahead of time and guests can build their own bowls.
